Thai chicken curry with ginger and Thai basil

The OG curry, on the menu for over 15 years and still as fresh as the day we pounded our first curry paste with mortar and pestles (really). What sets it apart is the brightness of the curry paste – with lemongrass, loads of coriander, lime zest and a restrained hand with chilli – the lime-leaf scented coconut sauce and the handfuls of greenery – peas, spinach and Thai basil. Dish up over rice and dinner is done. 

To Serve

Serve with coconut rice or rice vermicelli. On a busy weeknight, you can easily get away with no vegies on the side but some stir-fried or steamed greens, dressed with oyster sauce and sesame oil, would be good, as would a green papaya salad: shredded green papaya dressed with fish sauce, lime juice, garlic and chillies.

DEFROSTED: Pierce the film and microwave for 3 minutes stirring gently half way through, alternatively, empty into a saucepan and gently simmer piping till hot. FROZEN: Pierce the film and microwave for 4 minutes, stir gently and heat for a further 2-3 minutes or until piping hot. 

DEFROSTED: Pierce the film and microwave for approximately 6-7 minutes stirring gently halfway through or empty into a saucepan and gently simmer piping till hot. FROZEN: Pierce the film and microwave for approximately 10 minutes, stir gently and heat for a further 3-5 minutes or until piping hot.

    A dinner the whole family loves!
