Thai chicken curry with ginger and Thai basil
To Serve
To Serve
Serve with coconut rice or rice vermicelli. On a busy weeknight, you can easily get away with no vegies on the side but some stir-fried or steamed greens, dressed with oyster sauce and sesame oil, would be good, as would a green papaya salad: shredded green papaya dressed with fish sauce, lime juice, garlic and chillies.
Ingredients

This curry is a regular in our house and even our youngest has been loving it since he was 3. Microwavable and easy to add in extra veggies too.
