Bright, bold, and ready in a flash. These golden, curry-spiced egg noodles are tangled up with Chinese broccoli, red capsicum and shredded carrots. The prawns arrive raw because seafood deserves the VIP treatment and is best cooked on the spot. Takeaway couldn’t try to be ready this quickly (or be this good). 

To Serve

Garnish with a sprinkle of coriander and a wedge of lime.

Defrost fully. Set aside the sachet of sauce. Drain the excess liquid from the prawns. Preheat a fry pan, add a little oil and fry the prawns until almost cooked, add 1-2 teaspoons of sauce from the sachet, stir, then remove the prawns and set aside. Meanwhile, microwave the noodle and vegetables for 2-3 minutes, pour over the remaining sauce, stir, then microwave for another minute or until piping hot. Transfer the noodles to your serving plate and top with the prawns. Alternatively, preheat a fry pan. Add a little oil and fry the prawns until almost cooked, add 1-2 teaspoons of sauce from the sachet, stir, then remove the prawns and set aside. Add a little more oil to the pan if needed, add the noodles and vegetables and stir fry for 1-2 minutes. Pour over the remaining sauce, stir and gently heat for a further 1-2 minutes. Plate up the noodles and vegetables and top with the cooked prawns. Garnish with coriander and a lemon or lime wedge. Microwaves vary, please adjust the cooking times if necessary.
