Lamb koftas with minted yoghurt

These little discs of sweetly spiced lamb make for the easiest of delicious dinners, pan-fried and drizzled with our garlicky minted yoghurt and wrapped in warm pita bread. Throw in some cucumber and tomato and there’s dinner on the run for kids; or serve with a pilaf and roast vegetable salads for a mini Middle Eastern feast. Leftovers? Hello, lunchboxes!   

To Serve

In our houses, the classic, quick kofta treatment is to wrap in warm pita bread with a well-seasoned chopped salad of cucumber, tomato, spring onion and parsley or coriander, dressed with lemon juice. The koftas, with the minted yogurt in a separate bowl for dunking, make a good, substantial hand-around snack too, or surround with other dips, olives and pita for a quick meze platter. Oh, and they can also be piled on a platter with an array of other Middle Eastern-leaning dishes, salads and sides like cous cous or a rice pilaf, as part of a larger feast. So many uses for these handy little koftas.

FRY PAN: fry koftas in a lightly oiled non-stick frying pan over medium heat for 2-3 minutes each side (from defrosted) to 4-5 minutes each side (from frozen) and until golden brown. OVEN: place koftas on a baking paper-lined tray and bake in a preheated 180C oven (FF) for 15-20 minutes (from defrosted) to 25-30 minutes (from frozen), or until golden brown and cooked through. TIP: if cooking the koftas from frozen, defrost the minted yoghurt by placing the sachet in a cup of warm water.

    Perfect after school snack

    These are incredibly tasty and so quick to cook from frozen. I can grab a couple from the pack as a quick snack if the kids are ravenous after school but my favourite is serving them in pita bread with the mint yoghurt. So good!

    Nice but not much

    It was very flavoursome. The problem was it said that it served three and it came with 12 meatballs so if I was serving adults I think they would want more than four meatballs each. Thankfully it was only children and I had to make it a bigger dinner with salad and oven chips as it still wasn’t enough to feed three teenagers.
