Herby pork and veal meatballs, lightened with ricotta but no breadcrumbs, in a slow-cooked tomato sugo. Bulk ‘em up with pasta, keep ‘em lean and protein-packed over salad or go nuts and stuff ‘em into a crusty roll with mozzarella (oh my, you won’t regret this). Any which way, stash a few in the freezer as insurance against anything life can throw at you.   

To Serve

We love our meatballs tossed through any pasta or over gnocchi, with torn basil leaves and lashing of grated Parmesan.

You could also toss the meatballs and sauce with pasta and pour into an oiled baking dish. Top with grated mozzarella (or halved bocconcini) and Parmesan and bake till the cheese is melted and the sauce bubbling.
For an insanely delicious dinner on the go, stuff a short torpedo-shaped roll with meatballs and sauce and scatter with mozzarella then wrap in foil and bake till the cheese has melted.
