Impressive and easy on the eye, this boneless 1kg side of salmon is coated in herby breadcrumbs that come out golden and crisp after their stint in the oven. Our horseradish-dill cream might just be salmon's new best friend with a little heat and a lot of freshness to partner up with this table centrepiece

To Serve

Try tossing in some truss cherry tomatoes at the same time as the fish, until they start to blister and burst. Serve with classic sides of duck fat potatoes, Brussels sprouts with broccoli and crisp gnocchi and a big leafy green salad.

To Cook

Defrost fully before cooking. Preheat (FF) 210C and mix 2 tablespoons of olive oil into the bread crumb mix. Lay the salmon skin side down on a paper-lined baking tray, push the bread crumb mix onto the salmon and cook for 20-25 minutes. Transfer to a platter and serve with horseradish cream.

    Fennel and herb crusted salmon

    The fish came frozen, just had to thaw and press on the crumb mixture supplied separately. Easy cooking for 20 minutes in the oven and then served with the horseradish dill cream - was delicious and very appropriate for a special day such as Christmas Day.
