Easy to prepare and elegant on the plate – two fine pieces of skinless salmon marinated in our home-made red curry paste, ready to sear and then simmer in a richly coconutty choo chee sauce scented with Thai basil. Steam some Asian greens on the side, zap our coconut rice in the microwave and you’ll have the most delicious taste of Thailand in about five minutes flat.  

To Serve

Serve with extra Thai basil leaves, lime cheeks for squeezing and steamed Asian greens, like gai larn or choy sum, dressed with oyster sauce.

Salmon (fish) (50%), red onion, rice bran oil, garlic, dried shrimp (crustaceans), chilli, salt. Defrost fully before cooking. Heat a little oil in a non-stick frying pan and fry the salmon for 6 minutes over medium heat. Turn the fillets over and cook for 2 minutes before adding the sauce and simmering for a further 2 minutes.
