Oh how we love this salad – it's colourful, healthy, goes with everything and balances two of our favourite things: sweet, caramelized carrots and salty halloumi. Add some fluffy, nutty quinoa and a tangy cider vinegar and lemon dressing and you have the complete package. Dress it up with a handful of rocket or baby spinach and extra herbs and call it lunch – or serve alongside a simple piece of pan-fried chicken or fish.  

To Serve

This salad is more than fine as it comes – but can be easily extended with rocket or baby spinach leaves, sliced spring onions and fresh herbs. We love toasted almonds – slivered or flaked – or pepitas sprinkled on top as well. Works well as a light lunch or supper on its own – or it can jazz up any simple grilled or pan-fried protein as a side dish.

Peel back the film and remove the sachet of dressing. DEFROSTED: microwave the salad for 2 minutes, mix gently then heat for a further minute. Stir through the dressing and add some extra salad leaves if you like. FROZEN: defrost the sachet of dressing in a bowl of warm water. Microwave the salad for 6 minutes, mix gently, then heat for a further 1-2 minutes. Stir through the dressing and add some extra salad leaves if you like. Alternatively, remove the haloumi and pan-fry in a little olive oil before adding it to the warm salad.
