Spinach and paneer koftas with sweet tomato sauce

A wonderfully comforting North Indian vego dish of fluffy spinach and paneer koftas in a sweetly spiced tomato sauce. Swirl on some yoghurt and herbs and mop the sauce up with roti for an easy, complete dinner or go all-out with a spread of curries, dahl and coconut rice to feed a flexitarian crowd. 

To Serve

Serve with a swirl of yoghurt and a handful of coriander leaves, over rice or not as appetites demand, with some flat bread like roti or naan to scoop up the koftas and sauce. Or pair the koftas with any Indian curry, dahl and coconut rice, with chutneys and pickles on the side, for a colourful, festive feast for a crowd.

DEFROSTED: pierce the film several times and microwave for 3 minutes. Peel back the film, stir and heat for a further 1 minute. Alternatively, empty into a saucepan and simmer gently till heated through. FROZEN: pierce the film several times and microwave for 6 minutes. Peel back the film, stir and heat for a further 1-2 minutes or till heated through.

    I loved this dish. Koftas are a favourite of mine, but they are so much effort to make so this was amazing
