Quinoa and pickled beetroot salad with spiced pecans

Sweet pickled beetroot, chickpeas, spiced pecans and fetta are tumbled together with fluffy quinoa for a colour-packed, flavour-loaded salad. Finished at the end with a tangy pomegranate dressing and wonder why you’d ever try cooking quinoa from scratch again.

To Serve

Zhush it up with a handful of baby spinach, rocket or watercress and a bunch of roughly chopped soft herbs (we love mint, parsley or coriander for this).

Defrost fully. Toss the salad together in a bowl with spiced pecans and dressing and add a handful of rocket or baby spinach, and fresh herbs if you like. Frozen product. Defrost in refrigerator. Once defrosted, consume within 48 hours. Remove the plastic lining from the compostable tray before recycling along with cardboard sleeve.

Defrost fully. Toss the salad together in a bowl with spiced pecans and dressing and add a handful of rocket or baby spinach, and fresh herbs if you like.
