Pork loin steak with mushroom Marsala sauce

Super simple to cook, elegant on the plate and a delight to eat. Pork loin steaks marinated in garlic, thyme and lemon zest, ready for a quick sear in the pan then a simmer in a deliciously old-world European sauce of mushrooms, marsala, chicken stock and creme fraiche. This is tasty stuff – watch it get wolfed down, even by the cream-sceptics in your life. Dish up with a pile of greens and mash – or slice and toss through buttered noodles.  

To Serve

Serve with something carby to suck up all the delicious sauce – buttered mash, noodles or steamed rice. A big pile of spinach or green beans would be good on the side – or a leafy green salad to cut the richness.

Defrost fully, remove the pork from the marinade, and sear in a lightly oiled preheated frying pan for 3-4 minutes a side or until fully cooked then remove the pork from the pan and set aside. Pour the mushroom sauce into the frying pan and simmer gently for approximately 1-2 minutes or until heated through and thickening slightly.

    The pork cut itself is too thin to be called a medallion, but overall it's wonderful, especially paired with rice. The sauce is enough to put on the rice, too.
