We could live happily – and possibly forever – on this soup. It’s so hearty, wholesome and chock full of good stuff like leeks, carrots, celery, tomatoes, kale, white beans, potatoes, herbs... See what we mean? With the soup comes a sachet of fragrant pesto for drizzling just before serving, taking it up a notch from rustic to just a little bit special. Serve with a hunk of warm crusty bread for the most comforting of lunches or suppers. 

To Serve

Stir the pesto into the soup and serve with warm bread – and a good grating of Parmesan at the table.

DEFROSTED: peel back the film and remove sachet of pesto. Lay the film back over the tray and microwave for 3 minutes, stir and heat for another 1 minute. Alternatively, empty the soup into a saucepan and heat gently until piping hot. FROZEN: peel back and place the sachet of pesto in a cup of warm water. Lay the film back of the tray and microwave for 6 minutes, stir, and heat for a further 2 minutes or until piping hot.
