This dish can go so many ways. Treat it as a family-style casserole and serve with buttered mash and a salad, green beans or big pile of garlicky spinach or kale. Or dress it up with a bed of cous cous stirred through with almonds, preserved lemon and spring onions. Slivered green pistachios finish the dish nicely.

This was mine and my husbands favourite from the dishes we ordered! The lamb is so tender and full of flavour, and the eggplant makes for a lovely addition. We served it with pearl Cous Cous and it was a hit!

I served it with Greek yoghurt and garlicky spinach and my three guests LOVED it.
