This versatile baked frittata (with a little flour for stability) makes for a delicious canapé, picnic spread bite, a breakfast treat (with crispy bacon on the side) or lunch with a well-dressed salad. Served up in all its forms with a sweet and punchy tomato chilli jam on top. A snacky shape shifter in your freezer.  

To Serve

Canapé: allow to cool in the fridge before slicing into 24 squares and topping with the vibrant chilli jam and seedy mix. Brunch/ lunch: slice into larger pieces and serve with a shaved fennel and rocket salad on the side.

Preheat oven (FF) to 200C. FROZEN: ALLOW THE FRITTATA TO DEFROST ENOUGH TO REMOVE THE SACHETS AND TOP LAYER OF PAPER. Bake for 55-60 minutes or until a skewer tests clean and the frittata feels firm to touch. If the top is getting too dark, cover with foil. DEFROSTED: Remove the sachets and top layer of baking paper. Bake for 35-40 minutes or until a skewer tests clean. If the top is getting too dark, cover with foil. Allow to cool slightly before running a knife around the edges and turning out onto a platter or chopping board. Serve with a leafy salad. Alternatively, serve as a canapé, allow the frittata to cool in the fridge before cutting into 24 squares and topping with tomato jam and sprinkling with the seed mix.

    This was one of my favourite meals that I ordered my kids loved this one as well even my fussy little boy really enjoyed it. 10/10.
