Puy lentil salad with beetroot, walnuts and goat's cheese

Puy lentils – those chic-looking little blue-green French numbers – are the earthy base for this vibrant winter salad, with punches of roast beetroot, pickled red onion, toasted walnuts and creamy Meredith goat’s cheese all adding counterpoints of sweet, sour, nutty and salty. Toss through a handful of rocket or baby spinach for a satisfying lunch – or serve with duck, lamb or pork sausages. 

To Serve

This is a beautifully balanced light lunch or supper on its own, tossed through with a handful of rocket, baby spinach or even blanched green beans. For something more substantial, serve with sausages, grilled cutlets or – best of all – duck confit.

Defrost fully, peel back the film and remove the goat's cheese and paper and sit to one side. Lay the film back over the tray and place in the microwave for 3 minutes or until piping hot. Mix through a handful of rocket or baby spinach if you like and top with the goat's cheese before serving. While the lentils are already dressed with vinaigrette, you might want to drizzle with extra olive oil.
