Massaman lamb shanks

The warm spicing and rich nuttiness of a Massaman curry (Thai by way of India) makes a restaurant-worthy dish of tender, fall-apart lamb on the bone. We dry rub the shanks in spices, then slowly braise in a sauce based on a complex, home-made curry paste (just check out the ingredients list!). Dish up a generous shank a piece or pull the meat off the bones and serve over coconut rice to feed a crowd. 

To Serve

Serve with coconut rice and steamed or stir-fried leafy greens. The meat can also be shredded off the bone to toss, with its sauce, through noodles or spooned over rice.

Oven: remove the film and cover with foil. Place it in a preheated 180C oven (FF) for 45 minutes (from defrosted) to 1.5hr (from frozen), or until heated through. Microwave: peel back a corner of the film and microwave for 7 minutes (from defrosted) to 12-14 minutes (from frozen), or until heated through. Serve with steamed rice and leafy greens. Tip: to feed more, remove the meat from the bone, shred it with 2 forks, and serve over rice.
