Lamb roghan josh with spinach

A deep red-brown Northern Indian curry of sweet, diced lamb shoulder braised in a home-made masala. This was one of the first two dishes we ever made at the Dinner Ladies, from a beloved old Charmaine Solomon cookbook, and it still rocks our world. We’ve added spinach to make it a more complete meal – dish it up with rice and you’re done.

To Serve

Steamed basmati rice is all you need, with a scattering of coriander leaves and whatever chutneys and pickles you find in the fridge. But if you have a bit more time, make a cucumber raita to have on the side and serve with a simple spiced rice with peas.

DEFROSTED: Pierce the film and microwave for 3 minutes or until piping hot. Alternatively, empty into a saucepan and heat gently until piping hot. FROZEN: Pierce the film and microwave for 3 minutes then stir and heat for a further 2-3 minutes or until heated through.
