Creamy tarragon chicken and potato tray bake

Creamy tarragon chicken and potato tray bake

A family-friendly dinner that goes from freezer to oven to table, needing only a salad or greens on the side, with herby, lemony free-range chicken supremes nestled on a bed of roast baby potatoes and red onions and a classically French-inspired tarragon and mustard finishing sauce. What a total winner of a chicken dinner!!!

To Serve

For the simplest of green additions, throw some chopped broccolini into the pan for the last 15-20 minutes of cooking, and your work here is done. If you have more time and inclination on your hands, steamed green beans, dressed with butter and slivered almonds or a bowl of buttered green peas would be lovely on the side. And a green salad never goes astray.

    Delicious and so easy

Absolutely loved this dish. One tray into the oven and you get delicious moist chicken (generous portions too) and potatoes. I simply steamed some broccoli for on the side and dinner was served. Plus hardly any washing up. Hooray!
