How to light a Christmas pudding

Don’t believe anyone who tells you that there is any such thing as an “easy Christmas pudding recipe” - it’s actually a labour of love!  Our Christmas pudding recipe is a classic: we steep the fruit, work the mix, steam it looong and slooow....then carefully age it to develop the gorgeous, rich flavours.  What IS easy is lighting a Dinner Ladies Christmas pudding on the day – it's such a fun way to acknowledge the somewhat bizarre wintry traditions we celebrate here in our summery Australian Christmas!  Here’s how: 

Heat your pudding according to the label instructions.  Gently warm some brandy (about 50mls), pour it over your hot pudding, set a match to it, and enjoy the show! 

 

 

Brandy sauce recipe

Brandy sauce for Christmas pudding is easy to make – we like a hard sauce – so if you are so inclined, here’s our recipe: 

250g softened butter 
250g icing sugar 
200ml brandy 

Method: Beat the butter and sugar till fluffy and nearly white – this will take a while, don’t rush!  Add the brandy a spoonful at a time till incorporated.  We like to pile it into a bowl in fluffy mounds to refrigerate, but you can also form a log and wrap it, cutting it into discs to serve.  Either way, make sure it is well covered in the fridge.
