Hard-core republicans all over Australia are surely gnashing their teeth during Harry and Meghan's royal tour - everywhere they go, they leave a trail of heart shaped emojis. And nowhere more so than during morning tea in Dubbo, where Meghan arrived with her own banana bread!
We at The Dinner Ladies are sooooo in the know about this event. It was organised by the local branch of the Country Woman's Association. Having helped the CWA make a vast amount of strawberry jam with rescued fruit from the recent strawberry/needle crisis, we're all best mates now. And friends share recipes. So we hereby present the Duchess of Sussex's banana bread recipe!
(PS: if you'd like to make like a Duchess super-quickly, you could buy our bake-at-home banana bread and simply add the crystallised ginger and choc chips...just sayin'...)
Ingredients
2 medium sized over-ripe bananas
2 eggs
1/3 cup caster sugar
3/4 cup brown sugar
1 teaspoon vanilla extract
75g plain yoghurt
75mL mildly flavoured vegetable oil - we use rice bran
2 tablespoons crystallised ginger, finely chopped
Pinch of salt
1 and 1/4 cups SR flour
1/3 cup dark chocolate chips
Method
Pre-heat the oven to 180C.
Roughly mash the bananas.
Beat the eggs with both sugars till light and creamy.
Stir in the mashed bananas, vanilla, yoghurt, oil and ginger.
Fold through salt, SR flour and chop chips. Do not over-mix.
Pour mixture into a baking-paper lined 1 litre loaf tin.
Bake for 45 minutes or until a skewer tests clean.
Cool for 10 minutes in the tin before turning out on a rack. Store in an airtight container in the fridge, and use within 5 days.
