8 rice paper sheets

1 cup bean sprouts
Method
Prepare the rice noodles and duck and water chestnut sang choi bau according to the packet instructions. Dip the rice paper into water and lay it on a clean plate. Layer the ingredients in the middle of the wrapper, starting with the fresh mint, lettuce, duck sang choi bao mix, cucumber, and bean sprouts and finishing with the rice noodles.
Fold the bottom up and over the filling, fold in each side, and then tuck and continue to roll. Repeat with the remaining rice paper until you have used all the filling.

8 stems of broccolini
1 bunch baby bok choy
Additional vermicelli rice noodles (optional)
Method
Prepare the duck and water chestnut sang choi bau as per the packet instructions. Steam the veg until they are vibrant green but still have a bit of bite, and serve them alongside the duck and water chestnut sang choi bau mix. You can also tumble them all together with cooked rice noodles.
