3 WAYS WITH DUCK SANG CHOI BAU

Now don’t be fooled, this is not just for lettuce cups; it’s the secret to quick, versatile dinners that’ll keep even the fussiest eaters happy.  

THE TRADITIONAL 

Ingredients 
1 Dinner Ladies duck and water chestnut sang choi bau 
1 iceberg lettuce 
1 cup bean sprouts (optional) 
1 cup fresh coriander leaves 
1 lime  

Method 
Prepare the duck and water chestnut sang choi bau according to the packet instructions. Separate the iceberg lettuce leaves carefully to create a few perfect cups. Place them on a platter and top with the duck sang choi bau mix, a scattering of sprouts, and a sprinkle of coriander. Squeeze a little lime on top, wrap it into a crunchy bundle, and enjoy.  

 

RICE PAPER ROLLS  

Ingredients  
150g vermicelli rice noodles  
1 Dinner Ladies duck and water chestnut sang choi bau 
8 rice paper sheets 
1 cup of fresh mint  leaves 
1 bunch of oak lettuce  
1 large cucumber, sliced  
1 cup bean sprouts  
 

Method
Prepare the rice noodles and duck and water chestnut sang choi bau according to the packet instructions. Dip the rice paper into water and lay it on a clean plate. Layer the ingredients in the middle of the wrapper, starting with the fresh mint, lettuce, duck sang choi bao mix, cucumber, and bean sprouts and finishing with the rice noodles.  

Fold the bottom up and over the filling, fold in each side, and then tuck and continue to roll. Repeat with the remaining rice paper until you have used all the filling.  

 

STEAMED VEG  

Ingredients  
1 Dinner Ladies duck and water chestnut sang choi bau 
8 stems of broccolini  
1 bunch baby bok choy 
Additional vermicelli rice noodles (optional)  

Method
Prepare the duck and water chestnut sang choi bau as per the packet instructions. Steam the veg until they are vibrant green but still have a bit of bite, and serve them alongside the duck and water chestnut sang choi bau mix. You can also tumble them all together with cooked rice noodles.
